Chef Kevin Johnson has made working closely with local farmers and producers one of the hallmarks of his restaurant The Grocery in Charleston, South Carolina. He has become a master at pickling a portion of the local produce he procures and a variety of pickles are scattered throughout his menu. The acid in the pickles adds a brightness and depth to the dishes, and he brings that same brightness to this pumpkin dish, but this time with a Lemon Vinaigrette. The sweetness of the dried fruit, creaminess of roasted pumpkin and saltiness of the ricotta salata cheese blend beautifully with the gentle zip of the vinaigrette. This dish has a few steps but is worth the effort. It will be the star of your Thanksgiving table.
