I have a cousin who lives in Watertown, New York and I have been thinking about him a lot while listening to the weather reports from there that include 6 feet of snow. It is hard for me to even fathom that much snow. Even though I am not facing those kinds of weather conditions, I am still in the mood to cuddle up on my couch with a bowl of something warm and filling. Why not take it a step further and prepare a dinner that only requires one pot?

Sheri Castle’s Brazilian Chicken Stew employs a curry similar to a Country Captain and, as a bonus, is ready in one hour. Brunswick stew from Southern Soul Barbeque on St Simon’s Island kicks up the spice and Chef John Currence’s Mississippi Gumbo will transport you to the bayou with his dark roux and oysters.
