How about Some Octopus with That Rosé?

For the upcoming July|August issue, The Local Palate panel of wine experts teamed up to taste and rate summer’s most desirable wine: rosé. TLP Wine Editor Mike Cohen shares with you the panel’s favorite picks—a host of varieties that are sure to please. The feature alone would be pleasant enough, but luckily for you (and us!) Chef Nathan Thurston of the hotly anticipated Stars restaurant (opening in downtown Charleston this summer) developed some scrumptious dishes to pair with the selected wines.

Here he shares the final recipe of a three-part collection sure to impress and please your family and friends this summer. Don’t be fearful of the fact that the dish features octopus! Rather, embrace the excitement that comes with trying something new and take comfort in the approachability of the other fresh and seasonal ingredients, such as yellow tomatoes and sweet corn. In any event, a chilled glass of rosé will ease any first-attempt jitters you may have.
