In this month’s “Eatymology,” the folklore of the Lady Baltimore cake is revealed, just in time for her spring debut on tea tables everywhere. But there is a Lord Baltimore cake as well, and we couldn’t let any excuse to talk cake go unheeded. Yay cake!

The Lord Baltimore cake is a fitting and filling masterpiece of “wasteful” ingredients (egg yolks) left behind by his “wife,” the Lady Baltimore cake. This yellow cake is rich, tart, nutty, and most of all delicious. Delicate and made for the tea room, lightness is balanced by its chopped toppings.

Make both and become the ruler over dessert.
