
McCrady’s rounded out the month of April with a six-course dinner featuring wine pairings from Ridge Vineyards. The first two courses featured Ridge Vineyards’ only white wine (paired with Stone Crab with Rhubarb, Lemon Verbena and a Grilled Shrimp with Popcorn, Cucumber, and Basil), then the menu moved from white to red wine pairings, darkening through the courses.
The third course was a series of Sweetbreads with Turnips, Cherries, and Lemon Thyme paired with the Ridge’s Ponzo Zinfandel 2010. Meat and red wine pairings rounded out the culinary section of the meal, ending with the Lytton Springs Petite Syrah from 2012 paired with Aged Duck Breast with Wild Red Bay, Cauliflower and Whey followed by a course of the Beef Spinalis with Black Trumpet Mushrooms, Malt, and Wild Spring Onions with 2010 Estate Merlot.
