It took me a while to warm up to butternut squash. Don’t get me wrong—I loved it when someone else prepared it, but I was intimidated to tackle it in my own kitchen.

What helped me was a good knife and a hefty dose of patience when splitting one in half for roasting. After a little practice, the gourd became a go-to, and now I find many ways to incorporate it into my fall and winter meals.
