Getting your five servings of vegetables every day doesn’t have to be a struggle when one of our favorite chefs, Nicholas Yanes, is here to help . In late 2015, Chef Yanes opened the eagerly anticipated Juniper in Austin, Texas, with Northern Italian influences at the heart of his menu. His cuisine is technique driven with creative twists, as shown in his recipe for Warm Winter Greens, where baby kale, spinach, radicchio, and arugula are tossed in an ethereal combination of beurre blanc and hollandaise sauces. A sprinkle of salty parmesan cheese elevates this dish from mandatory to mouthwatering.
