    Ingredients
  • 12 ounces ahi tuna, sushi grade, diced into ¼-inch cubes
  • 2 Thai chilis, minced
  • 2 tablespoons minced shallots
  • 2 tablespoons minced lemongrass
  • 3 tablespoons diced red fresno pepper
  • 2 tablespoons minced mint
  • 2 tablespoons minced cilantro
  • 2 tablespoons minced thai basil
  • 2 tablespoons sticky rice powder (rice grains toasted then ground to a fine powder)
  • 4 ounces dressing (recipe follows)
  • 10 wonton chips (store-bought or wonton wrappers cut in half and fried)
  • 2 avocados, sliced
  • Lime wedges for garnish
  • Dressing
  • ¼ cup fish sauce
  • 2 tablespoons coconut palm sugar
  • 3 tablespoons lime juice

Dressing

  1. Stir fish sauce and sugar until dissolved.
  2. Chill, then add lime juice.

Ahi Tartare

  1. Combine all ingredients except wonton chips, avocado, and lime in a large bowl. Toss gently to incorporate.
  2. Serve tartare with chips, avocado slices, and lime wedges.
