1 bone-in pork shoulder or butt, about 10-12 pounds

½ cup garlic cloves, minced

Juice of 6 limes

Juice of 4 oranges

¼ cup kosher salt

1 tablespoon achiote (ground annato seed)


  1. Rub pork with all ingredients and marinate overnight in the refrigerator.
  2. Roast pork at 450 degrees for 30 minutes then cover with foil and roast at 250 degrees for 5 hours until meat falls of the bone. Serve with corn tortillas as tacos.
