Kimchee Slaw



1 cup Sriracha sauce  

½ cup seasoned rice vinegar

1 teaspoon minced garlic

2 teaspoons minced fresh ginger

2 teaspoons fish sauce

8 cups julienned Napa cabbage

2 cups grated carrots


  1. To make the dressing, in a blender or food processor, combine Sriracha, vinegar, garlic, ginger, and fish sauce. Purée until blended. Chill until ready to use.
  2. To make slaw, place julienned cabbage and grated carrots in a nonreactive bowl. Add dressing and toss well. Let sit 45 minutes before serving.
