Sausage Queso Dip



1 pound good-quality bulk sausage, (without casings)

2 tablespoons tomato paste

8 ounces cream cheese

12 ounces sharp cheddar cheese, grated and divided

1 10-ounce can of tomatoes, Rotel is a good brand

1 bunch chives, chopped for garnish

1 bag tortilla chips


  1. Preheat oven 350 degrees.
  2. Brown the sausage in a large skillet until cooked through. Add tomato paste and cook for two minutes.
  3. Add the cream cheese, 6 ounces of cheddar cheese to the sausage mixture and stir until melted. Add the tomatoes and blend.
  4. Pour mixture into a Pyrex dish and top with remaining cheddar cheese. Bake the dish in the oven until the cheese is melted and bubbly, about 15 minutes. Top with chives and serve with chips.
