Sweet Potato Biscuits with Country Ham

18−20 large or 30 small biscuits

    ingredients
  • 3 cups all-purpose flour
  • ¾ cup sugar
  • 1 tablespoon salt
  • 1 tablespoon baking powder
  • ½ teaspoon allspice
  • 1 teaspoon cinnamon
  • ¾ cup shortening
  • 2 cups mashed roasted sweet potatoes (about two)
  • ⅓ cup milk
  • Extra flour for dusting
  • 1 pound country ham, thinly sliced
steps
  1. Preheat oven to 450 degrees. Grease round baking pan.
  2. Mix the dry ingredients and cut in shortening.
  3. Stir in sweet potato, add milk, and stir until just combined. Pat out onto a floured surface (dough is rather sticky) to ½-inch thickness.
  4. Cut with biscuit cutter and place in the greased pan, not touching.
  5. Bake for 15−18 minutes. When biscuits are warm, slice in half and add a slice of ham. (We serve them plain but you can add mustard, butter, or other condiments if so desired). Serve immediately.
