Tomato Cracker Salad



2 medium ripe tomatoes, roughly chopped

2 hard-boiled eggs, cut into large chunks 

½ medium sweet onion, such as Vidalia, thinly sliced

¼ cup plus 2 tablespoons mayonnaise (light or regular)


Freshly ground black pepper

½ sleeve saltine crackers (about 20 crackers)

Fresh basil leaves to serve


  1. Place tomatoes, eggs, onion, and mayonnaise in medium bowl. Season with salt and freshly ground pepper.
  2. Using hands, gently crush crackers into large chunks and add to bowl. Stir until all ingredients are lightly coated with mayonnaise. Top with basil leaves and serve immediately.
