Summers in the South are inspiring – the oppressive heat and humidity can make us all dream of ways to find relief. Steven Carse of Atlanta-based King of Pops can relate. After being laid off from his job in 2009, he became obsessed with developing a recipe for the perfect popsicle. Inspired by South American, Steven and his brother Nick began tinkering with local Georgia-grown fruit to produce some mighty tasty popsicles. With just a humble ice cream pushcart, Steven began selling the popsicles in downtown Atlanta. They were an instant hit, and now you can find them in Whole Foods Markets, special events and farmers’ markets around the South. The brothers at King of Pops were kind enough to share one the recipe for one of their best selling and most ingenious pops, Cookies n’ Cream.
