Breakfast Recipes to Jumpstart the Day

By: The Local Palate

Schools resumed and summer vacations came to a close. We’re back in the throes of the early morning rush to get everyone out the door. Or, for many of us, in front of the computer to start virtual learning and telecommuting. Either way, getting back into the morning groove shouldn’t cost you or your household a solid breakfast. These breakfast recipes for protein-packed sandwiches, balanced bowls, toasts, and sweet breads will help jumpstart your mornings and keep everyone powered through the day’s class or meetings.

Breads, Biscuits, and Muffins

If you have a little time on Sunday or Monday evening, bust out one (or two if you feel ambitious) of these easy breakfast bread recipes for a grab-and-go treat that will last throughout the week. (Pro-tip: Keep any leftovers fresh by putting them in a Ziploc bag in the freezer. Take out however much you want at a time, let thaw slightly, and re-heat in the microwave.)

Zucchini Bread

It’s still squash season as far as we’re concerned. Cinnamon, vanilla, and plenty of chocolate chunks overshadow the vegetable’s taste, leaving everyone with an irresistibly moist bread.

Sweet Potato Muffin

Celebrate sweet potato season with these earthy, spiced treats that get plenty of richness from the sweet potato. We like to top ours with a smear of fig-and-orange jam.

Nathalie Dupree’s Two-Ingredient Biscuits

While you could make these ahead of time, this breakfast recipe comes together so easily and quickly that you can pull it off half-asleep. Put these nuggets in the oven, and they’ll be piping hot and ready by the time you head out the door. Make it a meal with an egg and slice of cheese.

EARLY MORNING BREAKFAST RECIPES

Whether you relish the morning’s early hours or hit the snooze button until the last moment, these frittatas, bowls, and toasts will fuel and satisfy a range of palates.

Frittata with Shiitake Mushrooms and Arugula

This baked egg dish is loaded with fresh vegetables and comes together in about 20 minutes, from start to finish. Add some gruyere or mozzarella cheese to it if you’re feeling frisky.

Page’s Buttermilk Pancakes

Short stack, tall stack, pancakes deserve a place on everyone’s breakfast table. These classic ones come from chef Ashleigh Page of Page’s Okra Grill in Mount Pleasant, South Carolina. A drizzle of maple syrup is the perfect match for the buttermilk’s tang.

Breakfast Sandwich

Monday mornings have nothing on this sausage, egg, and cheese. We love how this breakfast recipe uses bacon jam, Duke’s Mayo, and sauteed greens to zhuzh up the classic sammie.

Sorghum and Pecan Granola

Granola is one of those workhorse additions that dresses up any breakfast: Use it on top of yogurt or with oatmeal plus a drizzle of local honey. A handful of it alone makes for a filling mid-day snack.

Vegan Breakfast Bowl

Loaded with chia seeds, coconut milk, quinoa-maple granola, and fresh fruit, this breakfast bowl powers you for hours without weighing you down. Prep the coconut chia pudding and granola the night before for a breakfast that comes together in minutes.

Avocado Toast

This light toast packs a punch full of fiber and healthy fats. Enjoy on its own or top with an egg or smoked salmon for added protein.
