On any given day, if you ask my daughter what her favorite food is, she will say, “Meat.” I get it. Meat is good. But one of my favorite ingredients in my autumn pantry is butternut squash.

A winter squash perfect in soups, stews, pastas, hashes, and even sandwiches, it is hearty and sweet and adds depth to any dish, meatless or not. Here are a few recipes to get you started with one of the joys of the autumn.
