Sipping on a tequila cocktail is perhaps the most provocative way to cool off on a sweltering Southern day, but it’s a must on National Tequila Day. To help you celebrate in style, we turned two South Carolina mixologists, Jayce McConnell and David McCarus for ideas.
Jayce McConnell, formerly of Snackbar in Oxford, Mississippi, now hangs his hat at Edmund’s Oast in Charleston. This self-taught bartender is known for his knowledge of exoic liquors, shrubs, and bitters. He developed this cocktail the Pig Latin, just for us as a way to commemorate his love for tequila. It is a cool blend of T1 reposado tequila, pamplemousse liqueur and lime juice with just a bit of Creme de Violette.

Inspired by his dual passions for Charleston and fine wine, former FIG Restaurant beverage director David McCarus began the McCarus Beverage Company in 2013. His goal is to bring small up and coming wines, as well as wines and liquors previously unattainable in the South Carolina to the Holy City. His cocktail, The Berlin Wall, is a new take on the old faithful Margarita. David pairs t1 tequila with a Caribbean staple falernum liqueur and lime and serves it in a dainty couple with an orange peel garnish. The results will transport you to a sunny beach in Jalisco — and we promise you will not miss the salted rim.
