Hello again from the crawfish expert at TLP! I missed crawfish so much after writing my last blog that I just had to get my hands on some here in South Carolina. Lucky for me, I hit the jackpot this past Saturday at the Rosewood Crawfish Festival in Columbia, S.C.

Each year the Famously Hot city brings in crawfish straight from the bayou. From Harden Street to Holly Street, Rosewood Drive is lined with local vendors, chefs and musicians all there to “laissez les bon temps rouler”. Entertainment ranges throughout the day, and there are even rides and face painting for the little ones. Oh, and there are boiled crawfish. 8,000 pounds of it to be exact.

An authentic crew is brought in from Louisiana and boils the crawfish onsite and serves them alongside boiled potatoes and corn to eager festivalgoers just waiting to get peeling. For the crawfish lovers that don’t like to get their hands dirty, they can still enjoy the delicacy in the form of crawfish pies and crawfish étouffée.

Even though I did eat my fair share of crawfish, I of course had room for something else, and at the festival my options were numerous. Patrons could indulge in all sorts of southern treats like boiled peanuts, homemade fried chicken, fried alligator bites and giant slices of fresh, locally grown watermelon. I also met with Chef Jack Sheffield of “The Caterer” in Charleston. A Cajun himself, Sheffield was serving up traditional fair like chicken and andouille sausage jambalaya as well as a delicious gumbo. After tasting his food at the festival, I know this guy is the real deal.

A big congratulations to the capital city for hosting such a wonderful event. Between the delicious food, Cajun music, and friendly people, I felt like I was right back in Louisiana.
