Isla in Austin, Texas is noted as being one of the best places in town for a cocktail, especially when rum is involved—fitting for this Caribbean Cantina. Bar manager Miguel Lopez, Chef John Lichtenberger, and Chef de Cuisine Roman Murphy work in tandem to bring a slice of the islands to landlocked-Austin. So when football season rolls around, Chef Murphy delivers game-friendly, island-inspired fare like this cumin- and chipotle-laced Goat Fundito.

“The goat fundito is our fun play on traditional queso with the unique addition of roasted goat chorizo,” explains Chef Murphy; he also adds goat cheese to the fundito for an additional tang. If you can’t find Roasted Goat Chorizo, never fear, your favorite chorizo is a good substitute.
