French Onion Soup

There’s something so satisfying about a pot of soup simmering on the stove. As the leaves turn, our minds turn to some comfort from the kitchen, and really, one of the most comforting things out there has to be an ooey, gooey, bowl of French Onion Soup. Chef Sarah McIntosh of épicerie Café & Grocery makes a mean bowl, so we asked her for the recipe. She uses veal stock in hers (so that’s the secret!) but you can substitute beef stock if you must.
