Meatless Monday: The Laughing Seed Café Quesadilla

The Laughing Seed Café opened as a lunch counter in the YMCA in Asheville, North Carolina in 1991 before moving to its current location on Wall Street in 1993. A lunch counter no more, they have received accolades from Southern Living and the New York Times and have been named Best Vegetarian Restaurant in WNC which is no small feat in veggie-friendly Asheville.

Laughing Seed Chef Matt Cole melds together local ingredients with an easy, international flair that has brought a steady stream of diners through the decades. One of the stalwarts of the menu is the East/West Quesadilla. Curry is blended together seamlessly with sweet potatoes and a spicy chipotle sauce to produce a sweet and spicy dish that is as addictive as it is delicious.
