One of Spring’s Best Combos—Strawberries and Rhubarb

Rhubarb and strawberries are delicious springtime companions. The tangy flavor of the rhubarb is tempered by the sweetness of the berries for a tasty combination that has been celebrated for generations.

In Savannah, the Gottlieb family has been selling baked goods since the 1870s and brothers Laurence and Michael Gottlieb have captured this strawberry and rhubarb pairing in their recipe for Strawberry Rhubarb Farmer’s Cheese Danish.

“Rhubarb is one of those versatile ingredients that pops right after spring. We look forward to its emergence every year right around the same time as soft-shell crabs. We love using it in everything from jams, pies and even sauces for savory use,” says Michael Gottlieb.

Their recipe calls for a laminated dough that places thin layers of butter between layers of dough. The moisture in the butter evaporates during baking creating delicate, buttery layers of pastry. The danish takes a bit of patience but if you persevere through the process, you will be rewarded with a pastry ideal for Mother’s Day breakfast or just a cozy Sunday morning with a hot cup of coffee.
