Recipes for All Your Farmers Market Finds

By: The Local Palate

As farmers markets pop back up, we’re all craving the spoils of summer. Grab your reusable bags and take some inspiration from these seasonal greats.

You’ll need super-fresh cucumbers for these insanely crisp, tangy seven-day pickles. They’re a perfect partner to summer’s easy lunches, from tuna salad to deviled eggs. (Crinkle cutter not required, but it does make them look that much more impressive).

The return of peaches and plums brings to mind a fresh sweet-and-savory take (and 2019 cover star), this bacon-laden stone fruit salad. Pro tip: It pairs perfectly with an ice-cold txakolina.

And if you’ve got tomatoes, you’re halfway to the easiest dinner of them all: grilled tomato toast. All it takes is some crusty bread, a clove of garlic, and a sprinkle of salt and you’ve got summer on a plate.

Grilling maven Paula Disbrowe drizzles this spicy herb oil on charred broccoli and cauliflower; we like it on everything from roasted potatoes to grilled chicken.

Nothing spells summer like an ever-growing pile of zucchini you don’t know what to do with. This street corn-inspired riff with cilantro and cotija whips up in minutes—can’t say the same for zucchini bread.
