I don’t know about you, but it’s just about too hot for me to cook. I get this way every August, which is challenging since I am in love with the roasting function of my oven. Roasting is my go-to cooking method (350 degrees? Check.).

But turning on the oven right now isn’t what really want I want to do. What I want is a cool bowl of something in the fridge that I can dip out of to make easy lunches and pick-up dinners. It’s salad season, and here are three favorites from our archives:
