Salmon Goes Swimmingly with Brussel Sprouts

Sometimes salmon simply fits the bill. Its meaty texture and good fats are satisfying without the guilt, especially when we are all gearing up for the eating marathon that is the holidays.

Goldfish, part of Atlanta’s Dunwoody community for more than 14 years, pairs salmon with two stars of the season—apple cider and Brussels sprouts—for a dish that is easy for weeknights but has an elegant touch. Don’t leave out the butter at the end or you’ll have a less-than-stellar reduction. It’s a little fat that goes a long way towards lending a velvety texture and bringing the entire dish together.
