Cookbook author Gena Knox knows the secret to composing wonderful summer salads: fresh ingredients.
“These salads are the very reason I love summer,” she says. “The key to all of these recipes are great ingredients like vine-ripe tomatoes and peaches.” She tosses those ingredients with a Champagne vinegar dressing to add a little sour to the sweet.
For her grilled peach and avocado salad, she went back to her childhood. “Growing up in the peach belt of middle Georgia, peaches have always been a staple at our dinner table throughout the summer. This is a perfect salad to pair with grilled fish, chicken, or beef.”

For another salad, Knox goes in a different direction by combining ginger, lime, and tuna with an easy homemade mayonnaise. When she wants something a bit more refined, she tosses together seasonal vegetables with farro. For yet another option with a little crunch, she tops tomatoes with crispy broiled okra and herb buttermilk dressing.
