
I have heard that the mark of a good cook is how well they can roast a chicken. However, when you are in a bind, rotisserie chickens are so easy. We began by carving them up and serving them with a salad and loaf of bread, but as time has gone by they seem to have become more over-cooked and cardboard-like.
So this week, I went back to roasting a chicken myself, and I couldn’t believe the reaction of my family, especially my children. Perhaps the bar for chicken had been so lowered by the rotisserie chicken, but I really think that it is just hard to beat a beautiful, juicy home-roasted chicken.
