The Dai Before Christmas

Today is not the big day. But those arriving most likely still want something satisfying after a long ride in the car or in those airlines seats. At the same time, the host might want something whose pieces and parts can be prepared ahead then assembled with ease.

Dai Due in Austin, Texas shares a solution. Turkey Tamales, wrapped in collard greens, don’t steal the thunder from the Christmas Ham or Standing Rib Roast, but they just might taste like the beginning of a celebration. Start a tradition of your own this year (and leftovers work well for as an appetizer the next day too).
