Bee’s Knees

Ingredients

1/4 cup local honey

1 tablespoon dried lavender buds

2 ounces Hendrick's gin

1 ounce freshly squeezed lemon juice

Lemon wheel, garnish

Directions

  1. Make a honey syrup by combining honey and lavender with 1/4 cup hot water. Let steep for 30 minutes, then strain.
  2. In a cocktail tin, combine gin, lemon juice, and 1 ounce honey syrup with ice.
  3. Shake vigorously, then strain over a large ice cube in a rocks glass.
  4. Garnish with a lemon wheel.
