Beet Margarita

This stunning beet margarita is perfect for the heat and puts good use to leftover beet juice. The orange and lime juice provide a nice kick, nothing too strong. Agave sweetens those flavors out. Combine these with tequila and ice in a cocktail tin and you’re halfway there! Watch the drink turn scarlet as you pour beet juice over top. Throw on a lime wheel and remember to salt the rim for killer presentation. This beet margarita recipe from Charleston‘s Basic Kitchen is a no-mess delight that works for any season.

Makes 1 cocktail

    ingredients
  • 1½ ounces Espolon Blanco Tequila
  • 1 ounce lime juice
  • 1 ounce orange juice
  • 1 ounce agave syrup
  • Beet juice to top
  • Garnish: lime wheel, rimming salt

In a cocktail tin filled with ice, shake te­quila, lime juice, orange juice, and agave. Strain over fresh ice into a rocks glass with a half-salted rim. Garnish with lime wheel and pour beet juice over top.
