Photo by Tim Hussey Serves1 serving from Joe Raya of The Gin Joint, Charleston, South Carolina Ingredients ¾ ounce homemade beet molasses (1 quart beet juice and 1 cup sugar)¾ ounce lemon juice2 ounces Hendrick’s ginSoda waterFresh mint for garnish Directions For beet molasses, reduce over heat 1 quart of fresh beet juice until it is 8 ounces in volume. Add 1 cup sugar and allow to cool. Measure all ingredients to a shaking tin. Shake with ice and strain into a freshly iced Collins glass. Finish with soda water and garnish with fresh mint.
