
Ingredients
¾ ounce homemade beet molasses (1 quart beet juice and 1 cup sugar)
¾ ounce lemon juice
2 ounces Hendrick’s gin
Soda water
Fresh mint for garnish
Directions
- For beet molasses, reduce over heat 1 quart of fresh beet juice until it is 8 ounces in volume. Add 1 cup sugar and allow to cool.
- Measure all ingredients to a shaking tin. Shake with ice and strain into a freshly iced Collins glass.
- Finish with soda water and garnish with fresh mint.
