Grapefruit Gin and Tonic

Makes 1 liter infused gin for use in individual cocktails

    For the grapefruit gin:
  • Zest and juice of 2 grapefruits
  • ½ cup granulated white sugar
  • 1 liter gin
  • For the grapefruit gin and tonic:
  • 1¼ ounce grapefruit gin
  • Tonic water
  • Garnish: Grapefruit wedge

  1. Infuse the grapefruit gin: Add grapefruit zest and juice to a large glass jar. Add sugar and gin and stir until sugar is dissolved. Let infuse for 48 hours. Strain gin and discard solids before bottling.
  2. Assemble the drink: To a lowball glass, add grapefruit gin and top with ice. Top with tonic water and garnish with grapefruit wedge.
