My garden is chocked full and the tables at the farmers market are overflowing. Yes, it is zucchini season, but don’t start getting discouraged. Zucchini is among the most versatile of vegetables:
- It easily takes on the flavors of a marinade.
- It can be baked, sautéed or grilled.
- It is also a simple addition to baked goods.
When choosing zucchini, smaller ones are better. They have more flavor, a lower moisture content, and fewer seeds than the larger zucchini. Here are five of my favorite go-tos for keeping on top of the bounty of this summer vegetable.
