Apple Mignonette


¼ cup apple cider

¼ cup apple cider vinegar

1 pinch white pepper, ground

1 teaspoon Woods Cider Mill boiled cider syrup

1 sour apple (like Gold Rush, Rusty Coat or even Granny Smith) peeled, cored and finely diced

2 pinches kosher salt

3 tablespoons minced shallot


  1. Combine first four ingredients, then add remaining ingredients, and let sit for approximately 5 to 10 minutes for flavors to marry.
  2. To serve, spoon over oysters on the half shell.
