Candied Pecans



1 egg white

1 dash vanilla extract

½ cup packed brown sugar

½ teaspoon cayenne pepper

½ teaspoon salt

1 10-ounce package pecans


  1. Preheat oven to 300 degrees
  2. Line a cookie sheet with a Silpat or wax paper. In a large bowl, beat egg white and vanilla until foamy. Add pecans and stir to coat.
  3. Put sugar, cayenne, and salt in a plastic bag and shake to mix. Transfer pecans to sugar mixture and shake well to thoroughly coat with sugar mixture.
  4. Bake until browned, approximately 10 to 15 minutes.
