- Preheat oven to 300 degrees
- Line a cookie sheet with a Silpat or wax paper. In a large bowl, beat egg white and vanilla until foamy. Add pecans and stir to coat.
- Put sugar, cayenne, and salt in a plastic bag and shake to mix. Transfer pecans to sugar mixture and shake well to thoroughly coat with sugar mixture.
- Bake until browned, approximately 10 to 15 minutes.
