Chocolate Chestnut Pot Du Crème

  • 1 cup butter, melted
  • 2 cups sugar
  • 2 teaspoons vanilla extract
  • 4 eggs
  • ¾ cup cocoa powder
  • 1 cup flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Strawberry Confiture
  • 1½ cups sugar
  • 2 cups fresh strawberries, sliced
  • 1 vanilla bean
  • 2 cups fresh strawberries, sliced
  • Butter, melted
  • Organic peanut butter
  • Chocolate chips
steps
  1. Mix chestnut purée and sour cream using a food processor or mixer.
  2. Whisk egg yolks and vanilla into chestnut purée and sour cream mixture.
  3. Bring heavy whipping cream to a boil.
  4. Whisk in chocolate. Continue to boil until smooth (approximately 2 minutes).
  5. Temper chocolate and sour cream mixtures by slowly combining hot mixture to cool chestnut mixture.
  6. Pour into cups or bowls and chill until it sets.
