yields

½ gallon

    ingredients
  • 1 1 gallon milk
  • 6 cups sugar
  • 2 teaspoons baking soda
  • 4 tablespoons vanilla extract
steps
  1. Heat sugar with milk until it comes to a boil. Add baking soda and stir in gently. Simmer undisturbed for three hours, staying close by to prevent boil-over.
  2. Add vanilla when it has reduced to 1 quart with a dark amber hue. Remember, this is liquid sugar and can burn you, so be careful when handling. Serve over ice cream or plain cake.
