  • 5 pounds peeled figs
  • 3 pounds sugar
  1. Use just enough water to wet sugar. Let come to a good boil. Add figs to syrup and cook until figs are pink. Let syrup boil down until thick. Place in jars and seal.
  2. For those a tad more adventurous (and with an intense sweet tooth) can make their own homemade fresh fig icecream. Fresh figs are delicate and do not transport easily, so venturing to a nearby farmers’ market is the best bet. When purchasing figs, choose figs that are already ripe as they do not ripen well once harvested.
