Georgia Peanut-Crusted Rack of Lamb

    Ingredients
  • Salt and pepper
  • Crushed fennel seed
  • Canola oil
  • 4 pounds domestic lamb rack
  • 2 tablespoons dijon mustard
  • ½ cup ground Georgia peanuts
steps
  1. Rub seasoing and oil on lamb. In a hot skillet, sear all sides and leave at room temperature. Roast rack 15-20 minutes or until desired doneness has been reached. Allow to rest for 5 minutes then coat in dijon mustard and finish with ground Georgia Peanuts
