4 pounds domestic lamb rack
2 tablespoons dijon mustard
½ cup ground Georgia peanuts

- Rub seasoing and oil on lamb. In a hot skillet, sear all sides and leave at room temperature. Roast rack 15-20 minutes or until desired doneness has been reached. Allow to rest for 5 minutes then coat in dijon mustard and finish with ground Georgia Peanuts
