3 pounds fresh okra
10 cloves garlic
10 fresh dill sprigs
5 teaspoons red pepper flakes
5 teaspoons pickling spice
50 black peppercorns
¼ cup pickling salt or kosher salt
3 cups white vinegar
3 cups water
- Toss okra, garlic, dill, red pepper flakes, pickling spice, and peppercorns together in a large glass or metal container that can be placed in the refrigerator.
- Boil pickling salt, white vinegar, and water and remove from heat. Pour hot mixture over okra and spices. Stir to incorporate, then cover and refrigerate overnight.
- To serve, drain okra and arrange on plate.
