Refrigerator Party Pickled Okra

  • 3 pounds fresh okra
  • 10 cloves garlic
  • 10 fresh dill sprigs
  • 5 teaspoons red pepper flakes
  • 5 teaspoons pickling spice
  • 50 black peppercorns
  • ¼ cup pickling salt or kosher salt
  • 3 cups white vinegar
  • 3 cups water
  1. Toss okra, garlic, dill, red pepper flakes, pickling spice, and peppercorns together in a large glass or metal container that can be placed in the refrigerator.
  2. Boil pickling salt, white vinegar, and water and remove from heat. Pour hot mixture over okra and spices. Stir to incorporate, then cover and refrigerate overnight.
  3. To serve, drain okra and arrange on plate.
