Over at dessert café Shyndigz in Richmond, Virginia, baker-owner Nicole Jessee has long preached the rhubarb gospel, having grown up with a patch in her yard in southwestern Virginia. Here, she spins one of her most popular treats, oatmeal cream pie, into a vehicle for the tart vegetable (yep, vegetable). The verdict? Move over strawberries, rhubarb can go it alone just fine.
