    ingredients
  • 1 pound good-quality bulk sausage
  • 2 tablespoons tomato paste
  • 8 ounces cream cheese
  • 12 ounces sharp cheddar cheese, grated and divided
  • 1 (10-ounce) can tomatoes (such as Rotel)
  • 1 bunch chives, chopped
  • Tortilla chips
steps
  1. Preheat oven 350 degrees. In a large skillet, cook the sausage. Add tomato paste and cook for 2 minutes. Add the cream cheese and 6 ounces of cheddar and stir until melted. Add the tomatoes and blend.
  2. Pour mixture into an oven-safe dish and top with remaining cheddar cheese. Bake until the cheese is melted and bubbly, about 15 minutes. Top with chives and serve with chips.
