Strawberries and Cream Paletas


3 cups fresh strawberries

⅓ cup organic cane sugar

½ teaspoon pure vanilla extract

2 teaspoons balsamic vinegar

1½ cups milk


  1. Blend the strawberries for 20 seconds, then strain the purée through a sieve to remove seeds. Return purée to blender and add sugar, vanilla, vinegar, and milk. Blend until incorporated.
  2. Pour the mixture into pop molds or small paper cups and insert sticks. Freeze overnight.
