Sweet Potato Hot Sauce



1 small sweet potato (6 ounces), diced

2 Vidalia onions, diced

8 cloves garlic, chopped

12 Fresno peppers, seeded and diced

1 cup cider vinegar

1 cup white distilled vinegar

2 cups water

2 tablespoons cayenne or 4 dried chilies de arbol

1 cup salt

½ cup sugar


1. Sauté all vegetables until soft.

2. Add remaining ingredients and bring to boil.

3. Reduce to simmer, and cook until all vegetables are soft.

4. Purée, strain and check seasoning (adjust with salt, sugar and cayenne if necessary).
