¾ ounce pineapple juice
½ ounce honey syrup
(equal partsDry Champagne
Cinnamon, grated

Shake all ingredients except Champagne and cinnamon. Strain over a large rock of ice and top with Champagne. Garnish with a fresh grate of cinnamon.
