This tomato pudding is a Jamie Barnes family recipe that brings the taste of the fall harvest to your plates for any familial occasion.

Serves 6

    Ingredients
  • 1 cup melted butter
  • ½ cup tomato paste
  • 4 cups bread cubes
  • 16 ounces very ripe tomatoes, chopped and juice reserved
  • Kosher salt
  • 1½ cups light brown sugar

steps
  1. Preheat oven to 325 degrees; grease a 9×9-inch baking dish. In a small bowl, combine butter, tomato paste, and ⅓ cup water.
  2. In prepared baking dish, toss bread cubes with tomatoes and reserved juice. Season with salt and sprinkle brown sugar evenly over top. Pour butter mixture over top and bake for 20 minutes.
