In the Southwest, beef is king, and knowing how to deliver a good steak to the table is a necessity. Purists tout the simplicity of a basic salt and pepper rub on a good cut of meat. But when you want a little more punch, add chipotle to the marinade. Be sure to let the steak stand for ten minutes before serving.
