Swan Song



1½ ounces botanical gin

1½ ounces guava juice

2 ounces apple ginger shrub (recipe follows)

½ ounce fennel juice

2 bar spoons caraway tincture

Apple Ginger Shrub

½ cup apple juice

½ cup fresh ginger juice

½ cup champagne vinegar

1 cup simple syrup

3 tablespoons lemon juice

3 tablespoons lime juice


Shake all ingredients together and  serve up. Garnish with a fennel frond.
