Recipe and excerpt by Jenny Rosenstrach, The Weekday Vegetarians Get Simple

Honestly, this is substantial enough (and pretty enough) to pass off as a vegetarian main course, especially if you serve it surrounded with herby couscous. (If you like the less sweet Murasaki potatoes better, feel free to swap them in.) Dukkah is an Egyptian spice blend, usually made from a mix of nuts and dried spices like hazelnuts, pistachios, coriander, and sesame and fennel seeds. It used to be hard to find, but now you can find it in better supermarkets and, of course, online. Once you have it in the pantry, you’ll want to use it on everything. In a pinch, you can swap in crushed pistachios.
