Everything Spice (All-Dressed Spice)

It’s called Everything Spice for a reason. It’s got everything, so put in there what you like. This recipe is Cathy Barrow’s basic combination of everything seasoning from her cookbook Bagels, Schmears, and a Nice Piece of Fish.

She’ll sometimes add fennel seed or crushed red pepper. Other times, Barrow leaves out the garlic and add charnushka (nigella) seeds. Some people love caraway in their everything bagels; others find caraway an offense against all bagels. In Montreal, it’s called “All-Dressed” and never includes salt. This is only a guide, so create your own blend and make it all yours.

Makes ¼ cup

    Ingredients
  • 2 tablespoons poppy seeds
  • 2 tablespoons sesame seeds, white, black, or both
  • 1 tablespoon dehydrated onion
  • 2 teaspoon kosher salt, pretzel salt, Maldon salt, or coarse fleur de sel
  • 1 teaspoon freeze-dried garlic granules

In a small jar, mix together the poppy seeds, sesame seeds, onion, salt, and garlic. Cover and store in the
refrigerator for up to 3 months
